One of my favorite Mother's Day traditions as a child was waking up extra early to make breakfast for my mom. We would serve it to her in bed and she would feign surprise every year, as if she couldn't hear the pots and pans banging in the kitchen. Since then, I've always considered the second Sunday in May to be the premiere brunch day of the year, and for the past several years we've met up with family--including aunts, uncles, cousins, and all the babies--for a festive Mother's Day brunch. There are a lot of us, so picking a restaurant and letting the professionals do the dirty work is much easier than having brunch at home. Still, I love hosting and I'd really love to prepare a beautiful brunch for my family and friends; one that includes plenty of make-ahead recipes so I can enjoy the day with my loved ones. These casserole recipes are perfect for a Mother's Day, Father's Day or any day brunch because they feed a crowd and can be prepared in advance so I can focus on setting a gorgeous table and mixing up champagne cocktails.
