Ice Cream Sandwiches That Are Total Eye Candy

Summer is basically ice cream season, and one of my favorites is a good old-fashioned ice cream sandwich. Making them at home is even more fun because there are so many possibilities--use brownies, cookies, graham crackers, even soft, brioche buns to sandwich the ice cream, gelato, or fro-yo and you've got yourself the perfect summer treat.
