How To Make Cake Flour

Stumped by a recipe that calls for cake flour? No worries--you can make some yourself. Just remove two tablespoons of flour for every cup used and replace with two tablespoons of cornstarch. So if your recipe uses three cups of flour, you'll be taking out six tablespoons of flour and adding six tablespoons of cornstarch. Sift the mixture a few times and you've got yourself some cake flour. Make sure to remeasure it for whatever the recipe calls for and you're good to go.
