How to Make Confectioners' Sugar

One of life's cruel jokes: baking up the perfect batch of cupcakes and finding you don't have enough confectioners' sugar (powdered sugar) to make the buttercream frosting. When a recipe calls for confectioners' sugar and you realize you didn't pick any up you can just make some yourself. Here's how to do it:
For every cup of granulated sugar, add two tablespoons of corn starch. Place them both in a blender or food processor and pulse until it becomes a fine powder. Then remeasure for whatever your recipe requires.
