Cajun Spice Mix

Are you whipping up something tasty for Mardi Gras next Tuesday? Make this Cajun spice mix to kick up everything from blackened seafood and chicken to jambalayas, étoufées, gumbos, Creole sauces, and just about anything else you could possibly want to add some flavor to. Try mixing it into mayo for a spicy aioli that's excellent for sandwiches or dipping French fries into. Laissez les bons temps roulez!

Cajun Spice Mix
3 tablespoons salt 
2 tablespoons cayenne pepper
2 tablespoons garlic powder
2 tablespoons sweet paprika
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon freshly ground pepper
1 tablespoon onion powder

Mix all ingredients together in a bowl. Store in an airtight container at room temperature for up to a month.
