Cherry Cream Italian Soda

I've never been much of a soda drinker, but in college I briefly worked at a hipster coffee house (the "Friends Don't Let Friends Drink Starbucks" sign was prominently displayed by the restrooms) where I fell in love with sweet, refreshing Italian sodas. They were as fun to make as they were to drink, and I felt a little like a chemist, measuring out different syrups to create unique flavors. One of my favorites was a simple cherry Italian soda topped with cream, also called a French soda or cremosa. It was sweet and creamy and effervescent--just what I needed for those hot afternoons behind a coffee bar. Since my farmer's market has had plenty of cherries lately, I was inspired to recreate this old favorite recently; it tasted as good as I remember and was perfectly refreshing on a particularly sultry Palm Springs day.


Cherry Cream Italian Soda (Cherry Cremosa)
1 cup sparkling water
2½ tablespoons cherry-flavored simple syrup (I used Torani)
splash of whipping cream or milk
ice

Pour cherry syrup into a glass and add sparkling water; lightly stir to combine. At this point you should taste it to see if it's to your liking; add more syrup if it's not quite sweet enough for your taste, more water if it's too sweet. Top with a splash of heavy whipping cream and stir. Add ice and enjoy!
