Perfect Pancakes

Breakfast is my family's favorite meal and one go-to that's always a winner in my home is pancakes. I've been using the same recipe for quite some time and the results are always perfect--light and fluffy, and just slightly crispy around the edges. With fresh berries, bananas, or the occasional smattering of chocolate chips, this no-fail recipe can easily be made exactly the way we want it. 

Perfect Pancakes 
¾ cup milk
2 tablespoons vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder 
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons butter, melted
1 egg

In a small bowl, combine milk and vinegar and set aside for about 5 minutes to sour. Mix dry ingredients in a large bowl until combined. Whisk egg and melted butter into your soured milk, then pour wet ingredients into the dry ingredients. Continue whisking all ingredients together until batter has no lumps. 

Coat a large skillet with cooking spray and place over medium heat. Pour ¼ cupfuls of batter into the heated skillet and cook until bubbles appear on the surface. Flip pancakes with a spatula and continue cooking until browned on the other side. Enjoy!

    1. The vinegar sours the milk, so it's more like buttermilk. Of course, you could always just use buttermilk, but this is a great alternative if you don't have any.
