
Perfect Pancakes
¾ cup milk
2 tablespoons vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons butter, melted
1 egg
In a small bowl, combine milk and vinegar and set aside for about 5 minutes to sour. Mix dry ingredients in a large bowl until combined. Whisk egg and melted butter into your soured milk, then pour wet ingredients into the dry ingredients. Continue whisking all ingredients together until batter has no lumps.
Coat a large skillet with cooking spray and place over medium heat. Pour ¼ cupfuls of batter into the heated skillet and cook until bubbles appear on the surface. Flip pancakes with a spatula and continue cooking until browned on the other side. Enjoy!

ReplyDeleteThe vinegar sours the milk, so it's more like buttermilk. Of course, you could always just use buttermilk, but this is a great alternative if you don't have any.
