Mini Donut Muffins

May 10, 2013

Lately I've been on a major cinnamon kick (I'm blaming this on the pregnancy); I just can't seem to get enough of the stuff. These mini donut muffins are just what I've been looking for to satisfy my craving--they have a yummy cinnamon coating and they're bite-sized so they make the perfect snack. Plus, the recipe calls for things that I've already got in my pantry and fridge.

Mini Donut Muffins
½ cup white sugar
¼ cup butter, melted
¾ teaspoon ground nutmeg
½ cup milk
1 teaspoon baking powder
1 cup all-purpose flour

For coating
¼  cup butter, melted
½ cup white sugar
1 teaspoon ground cinnamon

Preheat oven to 375° and grease 24 mini muffin cups. For donut muffins, mix the sugar, melted butter, and nutmeg together, then stir in milk. Next, mix in baking powder and flour until just combined.  Fill the prepared muffin cups about half full, and bake until the tops are light golden brown, about 15 to 20 minutes.

For coating, mix cinnamon and sugar in one bowl, and have the melted butter in another. When the muffins are done, dip each one in the melted butter then roll around in the cinnamon-sugar mixture to coat. Allow to cool, then serve.
